Peanut Butter, Bacon, Granola, Maple Syrup Apples

Have you ever had a moment in life where you realize that you are either brilliant or disgusting when it comes to food choices?

Like last week, when the little brother and I went to the gym during vampire hours (read: before the sun) to work out and afterwards he made me bacon to go with my eggs.

gymWhich I then proceeded to put on top of my peanut butter toast and drizzle with maple syrup.
Brilliant or disgusting – your call.

All I know is that I love mixing texture, flavour and colours in almost every area of my life, but especially food.

One of the food “isms” I have is putting peanut butter on everything.

Everything. (I blame the blog world who caused it when I was young and impressionable).

So last weekend when I was craving a bowl of cereal, covered in peanut butter, covered in milk, I tried to come up with a healthier alternative before a run. I have nothing against the combo, but I am trying to eat as squeaky clean as possible as I enter into my training season so a bowl of granola the size of my face was not ideal.

Enter Jessica’s Granola Peanut Butter Apples.

Now, they are nothing to look at, but here is what you do.

Ingredients:

– 1 apple, your choice

– 1 – 15 tbsp of all natural peanut butter, your choice

– 0.5 – 7 tbsp granola, your choice

Instructions:

Cut the apple in half and hollow out the middle section of each piece. Mix peanut butter and granola in a bowl. Spread the mixture in the centre of both apple pieces.

They are an amazing, high energy snack. The only thing that could possibly make them better is some bacon and maple syrup.

    I love a banana and some nuts before a run! I too have a peanut butter addiction…..no, addiction would be an understatement – I go through peanut butter like nothing else, it’s becoming quite a problem hahaha
