Recipe: Peanut Butter Protein Truffles

I have become a mad woman when it comes creating protein based food and I don’t hate it.

Especially on weeks like this past one when I stumble across probably the most delicious recipe known to humankind. I was standing in my kitchen trying to figure out what to make for this weekend because I wanted to make some travel snacks for Gatineau (I am headed there to visit friends and run the half this weekend with some local runners) and I ended up creating magic. It goes down in history as the simplest recipe ever but the secret ingredient is homemade peanut butter.

You read that correctly. I am not even sharing a recipe card for this one. All you do is buy 2 pounds of peanuts from your local bulk bins and throw them in your food processor for a while. I made 2 cups on Sunday night and my jar already looks like this between a combination of furiously eating it and all the baking I have been doing.

So once you have that, you need some protein powder. I am loving the Genuine Health fermented protein in vanilla because it tastes divine, works well with all of my baking and is easy on my stomach. Peanut Butter Protein Truffles

Prep Time: 5 minutes

Cook Time: 5 minutes

Ingredients (10 truffles)

  • 3 TBSP honey
  • 2/3 cup Genuine Health vanilla protein powder
  • 1/2 cup homemade peanut butter
  • 1 TSP Cocoa powder (for dusting)

Instructions

Stir these ingredients together and try not to eat too much of the dough

Form into balls and dust with cocoa powder

Freeze for 2 hours

Demolish

Seriously. These turned out even better than I could have imagined and I love that they can be used as a dessert, healthy travel snack or out on the race course or wilderness for fuel.

    Brilliant! Well done lady. Simple is always best, and it always comes down to quality ingredients. Let them shine instead of complicating it all. I’ll make these sometime but I’ll have to use almond butter haha. I have a recipe for ‘cookie dough’ bites using GH Fermented protein as well, I’ll send it your way!

    Oh my gosh, A-to-the-MEN on the homemade peanut butter! Did I tell you about how one of my favourite to-do’s on the weekend is to make homemade almond butter and swirl in cinnamon and vanilla in the food processor? SO heavenly. But truffles… you’re onto something here. I’m so excited to try them!
