Hazelnut Flour Recipes

For Christmas, I was the happy recipient of the cookbook, Run Fast, Eat Slow and I have had fun testing out the recipes from the book. The biggest change I have made since receiving it is making my own nut milk, specifically hazelnut milk. In principle, I would whirl it up in smoothies, use it over granola and a host of other uses, but it is so good that I normally just enjoy a plain glass.

I have, however, encountered a dilemma. I have ended up with a host of hazelnut flour to use and there appears to be a  shortage of healthy recipes to be found to use it. I am sure hazelnut flour overabundance is an extremely niche issue, but I wanted to share two recipes I have created that have solved this issue and are DELICIOUS.

Recipe 1:

I am forever making variations of this recipe. I LOVE dates and the food processor is a magical thing that can create dessert-esque healthy treats in minutes.

Nutella Balls

Prep Time: 5 min

Cook Time: 10 min

Ingredients (serves 12)

  • 1 cup pitted dates
  • 3/4 cup hazelnut flour
  • 1 maca dark chocolate bar
  • Optional: cocoa powder

Instructions

Soak the dates in warm water until soft.

Place in food processor and add hazelnut flour and maca chocolate.

Blend until it becomes a paste and roll into small, 1 inch square balls.

Roll in cocoa powder for an extra chocolate boost.

Chill in fridge for 2-3 hours and enjoy!

(I love these for pre-workout fuel.)

Recipe 2:

I buy bulk apples from Costco (which ironically are from the orchard which is right across from where I work). Some weeks, I am just unable to consume them all and other times, I leave them in the car and they freeze. Last week was a bit of both and I was searching for a way to use up the apples that weren’t snackable. Enter this recipe.

Slow Cooker Hazelnut Apple Bake

Prep Time: 10 min

Cook Time: 2-3 hours

Ingredients (serves 4)

  • 4 apples (I used gala for this recipe)
  • 1/4 cup hazelnut flour (you can use almond flour)
  • 1/4 cup slivered almonds
  • 1 tbsp cinnamon
  • 2 tbsp butter
  • honey (For drizzling)

Instructions

Peel, core and chop apples into cubes. Place in slow cooker and sprinkle with cinnamon.

Mix together hazelnut flour, cinnamon and almonds. Add butter and stir until mixture becomes crumbly.

Top apples with mixture and cook for 2-3 hours.

Drizzle with honey before serving if desired.

ENJOY!

I love both of these recipes for natural sugars that work wonderfully to fuel my weekends – which are full of endurance training. I enjoyed the apples as a pre-ride snack and I used the nutella balls for my long run.

    There’s nothing like home made nut milk – hazelnut milk is also a favorite of mine for it’s creaminess and subtle sweetness. I love a good apple crisp so I’ll definitely be trying out the hazelnut apple bake!

    I have never made my own nut milk. I am WAY too lazy. I hear they taste so much better though so I should probably give it a whirl at some point. I don’t think I’ve ever actually tried hazelnut milk!! Just almond and cashew.

    Your recipes look delicious. The nutella balls sound so easy too! Must try.

    Wow that looks so good! I use almond flour a lot but have never used hazelnut flour! Do you think they’re a lot different?
